Our Chardonnay vines were meticulously managed to ensure a balanced crop was ripened during the cool and consistent vintage of 2019. Picking of our best chardonnay commenced on the 9th of March and was completed on the 19th of March.

100% Chardonnay (Mendoza clone, commonly referred to as Gin Gin in W.A)
10 months in 42% new and 58% 1-4 year old French Barriques
The hand-picked fruit was held in cold storage overnight to eliminate the need for must chilling. After pressing off skins and separating press fractions, the juice was allowed to settle naturally before racking to achieve a desired level of solids. The juice was then transferred to French oak barriques and puncheons to commence fermentation with a mix of inoculated and wild fermentation. Stirring of the yeast lees continued for seven months before the wine was allowed to clarify and rest on lees
Pale straw with hints of green.
A rich and ripe Chardonnay with underlying complexity. Ripe peach, fennel and citrus lead the way with nutty oak and creamy lees providing richness. There’s a subtle flintiness with a smokey-lanolin complexity.
Full with a soft creamy texture and balanced acidity. There are ripe fruit characters of peach and rockmelon, along with citrus, fennel, nutty oak and cream.
Pumpkin ravioli, grilled veal chops.
Storage / Bottling
Bottled in January 2019 under screw cap in a premium burgundy bottle. This closure should extend the cellaring life of the wine by reducing subtle oxidative robbing of flavour.
