Cabernet Sauvignon from our Leston vineyard, located in the heart of Margaret River, is crafted to
highlight the distinctive varietal and regional qualities of our best sites. In the temperate climate of the
Margaret River region Cabernet Sauvignon is at home. Here the maritime influences temper the
extremes of seasons, and allow Cabernet Sauvignon to thrive.

Aromas of red berry and black currant seasoned with dry savoury herbs and vanilla
spice. The palate is layered with rich blueberry and plum fruits, hints of spice and
long, fine guiding tannins. Tasted November 2018

Vintage commenced on the 16th of January 2016 amidst the devastating bushfires
in the Harvey and Waroona shires to the north of Margaret River. Such an event
put all in the state on high alert.
Across the temperate south west of Western Australia, the winter of 2015 was
typically dry yet sufficiently wet enough to fill catchments. The spring, less blustery
than preceding years and the start to summer, warm to hot. All in all, a promising
start.
As summer progressed, the early warmth suggested a rapid fire, short vintage. Then
in the third week of January, this prediction was derailed by a significant (65 to 90
mm in one day) and unprecedented deluge. The rain proved more blessing than
curse, due to the dryness of the soil profile and the timing of the event.
With verasion well advanced in late January, the native marri bloomed throughout
the region, keeping the birds otherwise occupied and the remainder of the vintage
progressed with little weather distractions.
In summary, the quality of the 2016 vintage is very good to great and the quantity
close to average. The highlight wines of the vintage are Sauvignon Blanc,
Chardonnay and Cabernet Sauvignon.

The wine was blended from a selection of the best batches of Cabernet Sauvignon
grown on our Leston vineyard, specifically block 29, which is located in the
Wilyabrup sub-region of Margaret River. The soils in this vineyard are shallow
lateritic gravels over sandy, clay loam.

Harvest occurred early April 2016. Small parcels are hand-picked and all batches
are sorted to remove matter other than grapes before fermentation. Fermentation
occurred in closed stainless steel fermenters. Selected parcels remained on skins
post the fermentation to further enhance the tannin profile while others were
pressed at dryness to capture fruit vibrancy. Each batch is matured separately in
order to build a wine history over time.
Barrel maturation – 18 months in 40% new and 60% older French oak barriques.
After a light egg white fining and filtration, the wine is bottled.
