Margaret River is arguably Australia’s premier Cabernet Sauvignon grape growing
region and Cabernet Sauvignon its greatest natural asset. Great Cabernet should
be both perfumed and poised, and meticulous site selection is critical to capturing
these key attributes.

Deep garnet in colour with classic cabernet aromas of mint, violets, savory dry herbs
and blackcurrant, and hints of smoky oak. The palate is fresh and bright, with red
berries and plums, and a fine acid structure. While the juicy freshness makes this an
enjoyable wine to drink young, it’s good balance between fruit weight, tannin and
oak suggests the wine will age gracefully.

The cold, wet winter / spring of 2016 with annual rainfall above average, set the
stage for 2017 vintage. Budburst and early spring growth were slow, and it became
evident the start to vintage would be delayed by 3 to 4 weeks. Early yield estimates
were high.
Fungal diseases thrived in the humid and cool conditions as the white harvest began.
Careful fruit selection and some early harvesting were necessary to retain quality.
By late March the tone of the vintage was less than upbeat as the heavens opened –
any further rain could turn compromise the reds beyond repair. An Indian summer
was desperately needed and thankfully April delivered with unseasonably dry, warm
conditions throughout. This prolonged, ripening phase allowed the flavours to
develop fully, and the tannins to soften and integrate.
Vintage is well over now, and wonderfully the outcomes are beyond our
expectations. Whites have retained purity and vibrancy, and the reds stunning
concentration, beautifully soft tannins and silky mouthfeel.

Cabernet Sauvignon grapes are sourced from several select vineyard sites located
in the Wilyabrup sub region and north to Wildwood Road in an endeavour to capture
ripe fruit flavours, supple tannins and the distinctive perfume of Margaret River
Cabernet Sauvignon.

The individual vineyard blocks that contribute to Miamup Cabernet are vinified
separately. After fermentation on skins, the malolactic is conducted in tank prior to
barrel maturation. Maturation occurs in French oak for 18 months. This length of time
in oak allows for the thorough integration of oak and fruit tannins. Bottling occurs
in September of the wine’s second year and released when ready.
