As with previous releases, the majority was fermented in stainless steel tanks to retain freshness and vitality and at cool temperatures facilitating a gradual conversion of sugar into alcohol by selected yeasts. 8% was barrel fermented in new French oak. This year’s blend is 55% Semillon 45% Sauvignon Blanc.
